From setting up rooms to clearing tables and keeping every space looking polished, our catering team is the backbone of every successful event. All the planning in the world wouldn’t matter without their dedication, attention to detail, and commitment to delivering a seamless experience for our guests.

Meet the Team Behind the Scenes

Sue

Sue began her journey with SCC as a contract employee in 2008 and joined the team full-time in 2010. Before that, she worked as a preschool teacher at Union Pacific Child Development Center. Sue’s favorite part of her role is her coworkers, who she describes as supportive and kind. She also appreciates working with some of the friendliest, most easygoing clients in Omaha.

Fun fact: Sue is an avid rock collector. Whether she’s at the beach, in the mountains, or even walking through landscaping, she’s always on the lookout for her next unique find.

Mary

Mary has been with SCC almost since the beginning, joining about a year after opening. Prior to SCC, she spent 19 years working with special education students at OPS, raised two daughters, and earned an art degree from UNO. She loves working with food and values the strong relationships she’s built with her coworkers.

Fun fact: Mary is known as our resident “cat lady” in the best way. After discovering a stray cat family near campus, she partnered with Feline Friendz to help trap, neuter, and return (TNR) cats in the area. Thanks to her efforts, many have been adopted into loving homes.

Erin

Erin is a lead member of our waitstaff and joined SCC in 2015 after raising her four daughters and volunteering at their school. She enjoys working alongside a team that is energetic, knowledgeable, and passionate about events. Outside of work, Erin loves spending time with her big family and baking.

Fun fact: Erin has 13 siblings and was born on St Patrick’s Day!

LuAnn

LuAnn joined SCC in October 2019 after serving as a full-time caregiver for her husband. Before moving to Omaha, she worked as a teaching assistant in an elementary school in Spencer, Iowa. She values the friendships she’s built with her coworkers and the sense of community she’s found at SCC. She has also become internet famous by staring in many of our Reels!

Fun fact: LuAnn grew up in town and then married into a farm family. She jokes that 50 cows followed them home from the church. On the farm over the years, they raised: mini donkeys, emus, llamas, sheep, goats, horses, pigs, cows, rabbits, and even peacocks.

Mason

Mason is our banquet setup captain and a true jack-of-all-trades. He joined SCC in February 2024 after managing a local gaming store in Omaha. Mason appreciates the supportive environment and enjoys feeling valued by both his coworkers and leadership team.

Fun fact: In his free time, Mason builds and paints miniatures for tabletop skirmish games. We’ll also be hosting his own wedding at the end of this month!
